Bill has over 39 years of hotel experience with a total of 24 years as a General Manager or owner. He has worked with top Canadian Reits and Management Companies, many of which were from their development and founding stage.  It was here that he gained great exposure to a variety of hotel brands as well as the repositioning and rebranding of many hotel projects.

 

Co-owner and operator,  of The Prune Restaurant, Mercer Beer Hall & Kitchen  and YSK Bistro. He is also a shareholder in the BWP Walkerton Hotel & Conference Center and a Governor with Best Western Worldwide.

 

The Parlour was purchased in 2003 as a closed 36 room hotel with 140 seat restaurant operating as the Olde English Parlour.  Renovated and re-developed the property to an award winning branded boutique inn that sold for over 9 times it’s original value in 2014.

 

As current owner of the Prune Restaurant, it not only fuels his passion as a food and wine enthusiast, it introduced to him to some of the top culinary talent in Canada as well as some remarkable young talent being introduced to the industry. It further allowed him to continue his knowledge and passion for this industry and continually enhance a skillset that is missing in most Hotel Management companies.

 

In addition to a passion and keen food and beverage sense, other hotel strengths would be overall hotel operation, re-positioning and branding strategies as well as accurate forecasting of budget and proformas, and ability to put into place the necessary plans, policies, and procedures to position a hotel to lead in its market and outperform all competitors in the market set.

 

He has sat on many boards and associations and was involved in the founding the award winning Stratford Tourism Alliance. He was past chair of the Atlantic Canada Sales and Marketing Coop with Holiday Inn Atlantic Canada. Community involvement in many fundraisers and being a coach of his sons hockey teams has topped the priority list throughout the years.
